A dictionary answer is "processed ground and roasted cocoa beans". The Spanish learned about chocolate in South America and brought it to Europe in the sixteenth century.

At that time it was simply a bitter, spicy drink. The Spanish added sugar cane, then chemists got involved, grinding, processing, stirring the crushed beans while adding milk and more cocoa butter to give the solid chocolate we know so well.
